Bitter melon with meat stir fry.

Easy and healthy.    One of my favorite dish for whenever especially when I’m under weather. Bitter melon have good benefits such as vitaminC , B6, Iron, Magnesium and calcium. The bitter melon are of course… bitter , however I have some tips that could reduce the bitterness to somewhat bearable flavor. Now dance your gorgeous butt away to the kitchen and cook with me, Darling.   Pots, pans and the attitudes (ingredients) :A medium size bowl for rinsing A wok or deep panPan spatula (I adore wooden one) Knife and Cutting boardThin soy sauce Mirin (Japanese rice wine) Cooking oil (I used rice bran oil) White pepper powder  SaltTruffle salt (optional)Bitter melon (the less bumpy is the less bitter, if there is not bumpy at all that’s is not bitter melon. Choose wisely.)1-2 Eggs 1/2 lbs of Ground meat (this time I used pork)Preparations :**Ps. The white fiber in the seedlings part of bitter melon are use less and extremely bitter get rid of it before sliced  - Slice bitter melon (as thin as photo) add sliced bitter melon and salt (about 1tbs) in the rinsing bowl  add water good amount that almost cover the melon and massage it roughly. Do it over 3-4 times this which help reduce the bitter flavor. After rinses drains all the water and get ready for the stove work.  On the stove :Medium heat  add 3/4 Tbs of cooking oil in the pan. When the pan is hot cracks eggs and stir it then add ground meat, 1 1/2 Tbs of thin soy sauce, 1/2Tbs of Mirin, a pinch of white pepper. Stir it in tile meat and eggs almost cooked, add the bitter melon and stir until bitter melon cook, test it if the flavor is what your la paletté desire and add a pinch of truffle salt to be serve, Bon appétit !! - “ Tous les goûts sont dans la neture. ”    “ All tastes are in the nature. ”
